One really minor note (unless you're Italian) - Ipolitina serves Calabrian style pizza al taglio, not Roman style. Different dough, different way of cooking it, and age-old enmity.

When I spoke to them, Ipolitina described their pizza as "pizza romana contemporánea", even though they are originally from Calabria. It’s always fascinating to see how styles and traditions evolve across regions—and continents.

Funny, because just a year ago I had a whole long conversation with the owner about the differences between Roman and Calabrian style, and how she was adamant about her pizza not being Roman. I wonder if she realized that Roman style is in right now, with numerous places popping up offering it, and decided to jump on that bandwagon.
